Çilbir or Turkish Eggs is a creative combination of yogurt, eggs, and a butter like liquid gold and is an absolute must. I used coriander in butter instead of parsley to give this dish an Indian touch. The bubbling butter with the smell of coriander reminded me of butter chicken.
When I tried Cilbir for the first time, I was pleasantly surprised by this unique combination of yogurt and eggs. If you’re longing for something exotic, Cilbir will take you from your dining table to Istanbul and back. Its such a crowd pleaser and also Instagram worthy, it is truly the only Brunch Recipe you need.


Çilbir – Turkish Eggs
Ingredients
For the Garlic Yogurt
- 250 gm Greek Yogurt at room temperature
- Handful Dill finely chopped
- 1 clove Garlic grated or pureed
- ½ tsp Chilli/Paprika Powder
- Salt to taste
For the Eggs
- 4 Eggs ( 2 per Person)
- Cooking Spray / Oil
For the Chilli Butter
- 40 gm Butter
- ½ tsp Chilli flakes
- ½ tsp Chilli / Paprika powder
- ½ tsp Cumin powder
- Handful Coriander Leaves finely chopped
Instructions
For the Garlic Yogurt
- Add the Dill, grated Garlic and the Chilli/Paprika powder to the Greek Yogurt and mix well. Add Salt to taste.
- Divide the Yogurt in two plates.
For the Eggs
- Heat a Pan and add Oil or Cooking Spray.
- Add the Eggs to a medium hot pan and cook the fried eggs to your liking. I like mine runny as the taste blends perfectly with the garlic Yogurt.
- Once done, add the eggs on top of the Yogurt on the plate.
For the Chilli Butter
- In the same pan now add the Butter. Let it melt until you hear it crackling or 'singing' as it is called.
- Now lower the flame and add the Chilli/Paprika powder, Cumin powder, Chilli Flakes and Coriander leaves. Let it cook for a few minutes until it releases its aroma.
- Pour the butter over the fried eggs.
- Enjoy your dish with Flatbread, or any bread that you like.

This recipe has been my go-to for the past few weeks and it is so comforting. Make sure your greek Yogurt is at room temperature, cold Yogurt will kill the dish. You could leave it out first thing in the morning like I do or leave the yogurt in a hot water bath until the other elements are done.
