Çilbir - Turkish Eggs
Çilbir is a Turkish dish that is perfect for breakfast, brunch or lunch. The original recipe uses poached eggs, but this tastes just as good when replaced with fried egg, and also saves electricity and water. The dish consists of three parts, a creamy garlic yogurt, fried egg and aromatic chili butter.

For the Garlic Yogurt
- 250 gm Greek Yogurt at room temperature
- Handful Dill finely chopped
- 1 clove Garlic grated or pureed
- ½ tsp Chilli/Paprika Powder
- Salt to taste
For the Eggs
- 4 Eggs ( 2 per Person)
- Cooking Spray / Oil
For the Chilli Butter
- 40 gm Butter
- ½ tsp Chilli flakes
- ½ tsp Chilli / Paprika powder
- ½ tsp Cumin powder
- Handful Coriander Leaves finely chopped
For the Garlic Yogurt
Add the Dill, grated Garlic and the Chilli/Paprika powder to the Greek Yogurt and mix well. Add Salt to taste.
Divide the Yogurt in two plates.
For the Eggs
Heat a Pan and add Oil or Cooking Spray.
Add the Eggs to a medium hot pan and cook the fried eggs to your liking. I like mine runny as the taste blends perfectly with the garlic Yogurt.
Once done, add the eggs on top of the Yogurt on the plate.
For the Chilli Butter
In the same pan now add the Butter. Let it melt until you hear it crackling or 'singing' as it is called.
Now lower the flame and add the Chilli/Paprika powder, Cumin powder, Chilli Flakes and Coriander leaves. Let it cook for a few minutes until it releases its aroma.
Pour the butter over the fried eggs.
Enjoy your dish with Flatbread, or any bread that you like.
